Originally from Southern Italy, provolone is of the "pasta filata" or spun curd family of cheeses. Piccante means "spicy" which hints at the sharpness of this cow's milk cheese due to its age. Used primarily as a table cheese, provolone piccante is also delicious melted onto sandwiches, pizza, sliced into salads, and also a terrific accompaniment to hearty grilled vegetables like eggplant.
