Umbria
Often referred to as the "Green Heart of Italy", Umbria's landscape is an artist's dream of rolling green hills, lush forests, vast farmland, scenic rivers and the Apennines forming a natural border between it and neighboring Marche. The only landlocked region on the peninsula of Italy, it is also one of the smallest and least populous though don't not be fooled by its size. Umbria produces a great selection fine wines, olives, and wheat.
The cuisine of Umbria is based not only on family traditions that savor fresh and natural flavors, but is also influenced by its neighboring regions of Tuscany, Lazio and Marche. Though pasta dishes are a great part of this region, legumes and an array of breads are two of the most indispensible components of Umbrian cuisine. It is likely that a visitor to Umbria would encounter flavorful meat stews of wild game or rabbit made with the noted green lentils of the region served with a loaf of fresh bread. Minestra di farro, or spelt soup, is another popular favorite in the area.
From minestrone soups with fresh vegetables and egg pastas; to wild pigeons in the Fall; to "porchetta", a stuffed young roasted pig perfumed with the aroma of wild fennel; Umbria is a wealth of deeply flavorful dishes.
Umbria is also home to several world renowned foods that have been both beneficial and influential in local gastronomy including chocolate from Perugia, the region's capital and the prized black Norcia truffle.
