The Calogiuri family has been making extra virgin olive oil in Puglia since 1825. Gianni Calogiuri continues the family business where he first cold presses his olive oils every November using the coveted "affiorato" method, taught to him by the generations before him. This olive oil has a fresh and delicate flavor. Use it as a finishing oil over your favorite sauces, or for dressing salads.
What is Affiorato? A traditional technique developed before electricity or machinery, which consists of waiting after the crushing of the olives for the lighter olive oil to rise naturally to the surface after being poured into vats. This oil affiorato, or "risen" is skillfully collected in special jugs by hand. Affiorato Extra Virgin Olive Oil is particularly fresh and delicate, and of the very best quality. In Italy, very few producers still use this method.
