Pasta with Breadcrumbs


Pasta 'ca Muddica

Ingredients:

2 cups coarsely grated bread
3 garlic cloves, chopped
1 bag (500g) A.G. Ferrari Foods spaghetti
2 90-gram tins Rizzoli anchovies in olive oil
1/2 cup Italian parsley, chopped
1/2 cupA.G. Ferrari Foods extra virgin olive oil

Region: Sicily



Instructions:

Toast breadcrumbs in the oven. Set aside. Cook pasta in a generous pot of boiling,salted water until al dente. Gently simmer garlic in oil for several minutes, until tender (do not brown). Discard oil from anchovies; add anchovies to garlic. Saute until melted. Add parsley and take off heat. Drain pasta, then toss with anchovy sauce.Plate pasta on individual serving plates and sprinkle with breadcrumbs.

Serves 3 to 4.
