for cookie dough
3 3/4 cups unbleached all-purpose flour
3/4 cup sugar
1/4 cup salt
1 cup unsalted butter
1 egg yolk + 2 large eggs
1 tsp anise extract

Region: Sardinia

Instructions:

To make frosting, put powdered sugar in a bowl; add powdered sugar, beating lightly, until you have a creamy consistency. The frosting should cling to the spoon when it's ready.

Place the flour, sugar and salt in a bowl and stir to mix it. Cut the butter into small pieces and cut it into the flour mixture with a pastry blender or two knives until the mixture resembles cornmeal. Slowly stir in the eggs one at a time, mixing thoroughly. Stir in the anise extract.Gather the dough and knead it briefly on a floured surface until it comestogether. Roll out the dough and divide to make 2 flat disks. Chill in the refrigerator at least 1 hour.

Roll into small balls and cover with frosting.Bake at 350 degrees for 15-20 minutes.
