Lenticche Brasate
Braised Lentils


Lenticche Brasate

Ingredients:

3 garlic cloves
1 small onion
1 stalk celery
1 carrot
2 peeled tomatoes (canned)
1/3 cup A.G. Ferrari Foods extra virgin olive oil
3 cups A.G. Ferrari Foods dried lentils
7 cups water
1 rosemary stalk
2 tsp salt
1/4 tsp fresh ground black pepper

Region: Abruzzo



Instructions:

Using a food processor, chop garlic, onion, carrot, tomatoes and celery. Saute the vegetables in extra-virgin olive oil for 3 to 4 minutes. Add lentils and saute 2 to 3 minutes. Add water, rosemary and salt. Continue to cook for 30 minutes. Stir occasionally. Add black pepper and serve hot. Drizzle again with extra virgin olive oil. Serve with Montepulciano D'Abruzzo.

Serves 6 to 8.
