The most savory smoked ham from northern Italy
Produced in the Italian region of Alto Aldige, Speck is a variety of smoked ham, similar to prosciutto but leaner and denser. It is brined in a blend of garlic, black pepper, juniper berries and bay leaves. Although less known than prosciutto or bresaola, Speck Alto Adige is a wonderful cured meat with a wide array of uses in the kitchen. Less pungent than pancetta and more flavorful than prosciutto, it will add an interesting hint of smoke and salt to any dish. Enjoy it thinly sliced and layed over melon or figs, in a carpaccio salad, diced in a savory pasta dish or just simply on its own! |
