Tuscany's finest dessert wine is an amber nectar: from the hills of the historic Florence-Siena wine-growing corridor.
The estate has been in the Ciappi family for several generations, and young Fernando and Lorenzo Ciappi, with the aid of consulting enologist Luigino Casagrande, combine traditional production.
This small family winery in San Gimignano air dries its white Trebbiano grapes until they are almost raisined. The grapes are then aged in small wood barrels called caratelli and made into this classic amber nectar.
The result is a moderately sweet wine with good acidity and rich lush texture. It has a special balance which makes you want to keep sipping it. Drink this Vin Santo after dinner with biscotti.
