Organic Type 2 wheat flour from Renzo Sobrino's mill in Piemonte. The heirloom seeds that Renzo Sobrino uses to grow his organic wheat flour yield a third less wheat than more common varietals. Commercial mills don't have time or patience for such a small yield, but Renzo Sobrino is committed to quality and believes this is the best wheat available. We think the resulting product is unsurpassed in quality and flavor. We carry Renzo's Type 2 flour, a coarser, more flavorful grind than the more commonly available Type 00 flour. Type 2 flour requires slightly more liquid than finer grind flours but can be used to make the same recipes. This flour makes outstanding fresh pasta, pie crust, pastry dough and pound cakes. |
