Chestnut flour made with locally grown dried chestnuts. Chestnut flour is made from dried chestnuts that have been ground to produce a fine flour. The most flavorful chestnut flour is made using chestnuts that are neither too dry nor too raw. Under Renzo Sobrino's watchful eye, local chestnuts are transformed into a well-balanced flour that tastes like sweet, rich chestnuts. Northern Italians use chestnut flour to make castagnaccio, a much-loved cake made with olive oil, golden raisins, pine nuts, walnuts, and rosemary. This flour is vacuum-packed.
