A soft, spreadable cheese from Lombardia. Taleggio, one of our best-selling cheeses, is produced year-round in Lombardia in a traditional square pillow shape. It is aged in caves, where the rind is sponged with brine. The rind is edible and the paste is creamy and supple with a thin, pinkish gray rind. It is a mild and fruity cheese when young, becoming buttery and earthy with a hint of mushroom as it ripens. Similar in texture to, but more flavorful than, most of the brie available in the U.S. Spread on fresh bread or crostini; use to layer between pieces of polenta, then bake until bubbly; spread thinly on fillets of beef or chicken, then roll and bake; use as a pizza topping; use to make a creamy pasta sauce; or serve as a dessert course with fresh fruit.
