The pigs used for this product feed only on the whey of Parmigiano-Reggiano, which is said to make them fatter, sweeter and, yes even smarter than in other regions. This fine prosciutto is aged for 16 months and cured, as by law, only with sea salt. Use thinly sliced, wrapped around grissini or melon.
