Zampa is our only oil from the island of Sardinia, an often overlooked culinary oasis. This extra virgin oil is made at Giorgio's farm in Cagliari, in the hills at the foot of Montiferru (literally "iron mountains") -- only a stone's throw from the ocean on the western side of the island. Produced under the guidance of Giorgio himself, this oil is made with Bosana olives that are pressed within a few hours of picking, ensuring the oil's quality and freshness.
