A distinctive pasta from Liguria The tradition of Croxetti (also known as Corzetti) dates from the Middle Ages when noble families showed their status by embossing their seals into pasta. Frequently, the symbol used was the Latin cross, hence the name. Alta Valle Scrivia is a small producer nestled in the seaside town of Montaggio in Liguria and one of the few pastificios still creating this traditional Ligurian pasta cut. Serve with light cream sauces, sage and butter sauce, or pesto sauce topped with pinenuts. |
