50 years of aging lends luxury in a bottle.
Pedroni's Affinato, Extra Vecchio and Cesare balsamics, aged for 20, 30 and 50 years respectively, are thick, complex and viscous. They make a luxurious accompaniment to vegetables, meat, ice cream,
strawberries, or savored as an after-dinner digestive.
There are only 100 bottles of Pedroni's 50-year-old vinegar--called Cesare in honor of Pedroni's founder. We were able to secure a small percentage of the total allotment. Each bottle comes packaged in a wood box with a book that describes the balsamic making process, as well as a signed card from the producer noting the lot number of the balsamic. Each box also includes a hand-blown glass dropper for serving this precious commodity.
