An aged basket cheese from Calabria. This aged cheese is made in Crotone, a small, mountainous city in Calabria (thus its name). It is sometimes called a "basket" cheese or canestro because it is aged in a basket, which gives pecorino Crotonese a distinctive cross-hatch impression on the rind. Made with sheep's milk, this voluptuous, medium-bodied cheese is aged for six months. Terrific as a table cheese, but also a fine complement to hearty antipasto fare like olives, mushrooms, salami and roasted peppers.
