A wonderfully sharp and robust Asiago
Italian Asiago originated in the village of Asiago in northern Veneto, where it has been made for centuries. This particular Asiago is aged a full year as opposed to 6 months, which allows it to take on a distinct pleasant sharpness. Asiago is produced in
Co-ops, specialized groups of local dairies which provide premium quality grassfed cow’s milk. It is this Alpine milk, with a higher protein content, that makes Asiago such a special, healthy cheese. Asiago d’Allevo has a complex variety of flavors ranging from the fruity, to the nutty to the pungent. Asiago is a highly versatile cheese, firm enough to grate but also wonderful as a table cheese. A classic in northern Italian cuisine, grate it over pasta, polenta or risotto, or simply enjoy it on its own paired with a glass of full-bodied wine. |
