Hand-carved pasta stamp from Liguria. These splendid wooden pasta stamps are handmade by master carver Franco Casoni, who applies his trade in the Ligurian coastal town of Chiavari. Casoni is one of the last remaining craftsmen to make corzetti, which are used to make a classic Genoese pasta. Corzetti means "little crosses," which suggests that traditional designs might have included a cross used by Genoese crusaders. Even today, corzetti stamps typically reveal something of the Genoa's glory days, in addition to newer, more decorative floral and nautical designs. Make your own corzetti with this decorative stamp by making fresh pasta dough, then pressing a thin round of dough between the two stamps. There will be an imprint on both sides. Traditionally, this thin pasta is served with basil, tomato, walnut or mushroom sauces. Each package includes one different top and bottom stamp. |
