Condimento Siciliano

Ingredients:

1/4 cup A.G. Ferrari Foods extra virgin olive oil
1/2 small onion, chopped
1 tin Rizzoli anchovies
1/4 cup La Nicchia capers, in salt (rinsed with water)
2 Tbsp pine nuts
1/4 cup raisins
1/4 cup Annibale Bianco white wine
1 Tbsp parsley, chopped

Region: Sicily



Instructions:

Soak raisins in warm water for 10 minutes. Drain and set aside. Saute onion in olive oil for 1 minute. Add anchovies, capers, raisins and pine nuts and sauté for 3 to 5 minutes over medium heat. Add wine and parsley; saute for 1 minute, then remove from heat and let cool.

Use with boiled potatoes, cauliflower, zucchini or broccoli, or as a topping for toasted bread (crostini).

Serves 6 to 8.
