Cannoli
Ricotta-Stuffed Pastry Shells


Cannoli

Ingredients:

2 cups Borrelli fresh ricotta cheese
1 cup 10x sugar
3 Tbsp anisette or sambuca
1/2 cup finely chopped semisweet chocolate or candied citrus
1/2 tsp cocoa powder
12 Cannoli shells
Region: Sicily


Instructions:

Mix ingredients and stuff into cannoli shells with a pastry bag or spoon. Put some chocolate chips or candied fruit pieces on the either end ofthe cannoli for decoration. Sprinkle powdered sugar on top. Makesenough for 12 shells.

If the ricotta seems too wet, squeeze it through a cheesecloth to getrid of excess moisture. Don't fill the shells more than an hour beforeserving or they may become soggy.
